Dennis's Spring Roast was such a hit this season that we sold out! Therefore, we are releasing the summer roast a bit early this year, and wow! It is one you won't want to miss!
We here at Josephine's Roasters believe that summer coffees should be vibrant, sweet, layered, and refreshing while still maintaining depth and structure in the cup. This year’s seasonal release from Peru delivers exactly that.
Produced by the Orígenes Women’s Group in the Cusco region of Peru, this organic lot combines Typica, Catimor, Bourbon, and Caturra varieties grown at an impressive elevation of 2350 meters. The high elevation contributes to exceptional density and sweetness development, creating a cup that continues to evolve from first sip to final finish.
What makes this coffee especially unique is its Anaerobic Washed Double Fermentation processing method. During fermentation, oxygen is intentionally limited, allowing controlled microbial activity to enhance sweetness, fruit complexity, and mouthfeel. The double fermentation adds additional structure and clarity while preserving balance and cleanliness in the cup.
The result is a coffee layered with notes of dried cherry, honey, milk chocolate, papaya, and tropical fruit.
As we continue refining the roast profile, the focus has been on highlighting the papaya and tropical fruit characteristics while maintaining the milk chocolate undertone and subtle tartness of dried cherry that gives the coffee structure and balance. The cup is smooth and approachable early, but what stands out most is how the sweetness intensifies as the coffee cools.
Beyond the cup itself, this coffee represents the work and dedication of the Orígenes Women’s Group—women producers committed to quality, sustainability, and advancing specialty coffee production within their communities. Their craftsmanship and attention to detail are reflected throughout every stage of processing and ultimately in the final cup.
